Brew Honey is all natural honey that has been slightly and naturally caramelized during our wax rendering process. We apply just enough heat to separate the wax and the honey from a slurry called cappings. While brewing mead several years ago I discovered that this honey is the perfect fermentable natural sugar. The heat tends to kill many of the wild yeasts in the honey, which helps control the environment for your yeast. In addition the slightly Carmel flavor ferments very clean. The odd “chemically” after taste often observed in beer and wine made with honey is not an issue using our Brew Honey. Since this honey is a wonderful by product of another process we can offer it at a very reasonable price. 8lbs Grampas Gourmet Brew Honey
4 large Tbsp grated lemon peel
6-8 whole cloves
Water to 5 gallons
1 package Pasteur Champagne Red Star Active Freeze-Dried Wine Yeast
In clean sterile 5 gallon bucket, pour 8lbs of Grampas Gourmet Brew Honey. Boil aprox. 4 gallons of water, CARFULLY pour 4 gallons of boiling water onto honey stir with sterile spoon to dissolve honey, add lemon peel and cloves. Let wort cool to about 85 degrees, pour into fermenting vessel, pitch yeast, secure air lock. Ferment 3-4 weeks and rack as needed .Bottle at 10-14 months age in bottles in cool dark place for 12 months.
Mead will be light amber in color with dry clean finish.
